Blade made of high quality chrome molybdenum steel, hardened in a vacuum process to 56 - 57 Rockwell hardness. The matt-polished edge offers optimum rust resistance. So that every knife is sharpened from the start, the final grinding and removal is done by hand.
Standard plastic handle made from especially non-slip and pleasantly easy-to-grip material (TPE). The well-formed protective nose provides a secure hold and reduces the risk of slipping of the knife-guiding hand. The plastic handle is suitable for contact with foodstuffs and complies with the requirements of the following legislation (in each case including all additions and in the version valid at the time of the declaration):
Regulation (EU) No 1935/2004 on materials and articles (including active and intelligent food contact materials and articles) intended to come into contact with foodstuffs and repealing directives 80/590/EEC and 89/109/EEC, as amended.
Regulation (EU) No 10/2011 of 14.01.2011 relating to plastic materials and articles intended to come into contact with foodstuffs.
The knives are dishwasher proof. However, we recommend manual cleaning to protect the cutting edge.
