Classic slicing knife, which is used both in the butchery, in the restaurant or hotel kitchen, as well as in parties and buffets.
Blade made of high quality chrome molybdenum steel, hardened in a vacuum process to 56 - 57 Rockwell hardness.
The matt-polished edge offers optimum rust resistance.
Through the regular waves along the cutting edge, the knife slides safely and without slipping through all the material to be cut with hard shells or crusts. The shaft distance (from tip to tip) is 10 mm.
The special feature of this knife besides the the highest-quality blade is the handle.
It is made of two components. The inner red core is continuous and gives the handle the stability. The outer skin is made of particularly soft plastic.
Together with the special surface, this handle allows fatigue-free and very slip-proof working. The knife is always well in the hand.
The plastic handle is suitable for contact with foodstuffs and complies with the requirements of the following legislation (in each case including all additions and in the version valid at the time of the declaration):
Regulation (EU) No 1935/2004 on materials and articles (including active and intelligent food contact materials and articles) intended to come into contact with foodstuffs and repealing directives 80/590/EEC and 89/109/EEC, as amended.
Regulation (EU) No 10/2011 of 14.01.2011 relating to plastic materials and articles intended to come into contact with foodstuffs.
However, we recommend manual cleaning to protect the cutting edge.
