Nitrite curing salt is indispensable in sausage and meat processing – from small-scale operations to large-scale production – and guarantees both visual and culinary delights. Without the addition of this homogeneous mixture of high-quality evaporated salt and sodium nitrite, many of our meat products would be impossible to produce.

The term curing refers to the pickling or preserving of meat and sausage products with curing salt. Curing has four important effects: optimal reddening of the meat products, aroma development, protection against dangerous bacteria (botulinum toxin), and protection of fats from oxidation (rancidity).
